Caramel Apple Pie Cookies – Just in time for Thanksgiving. Perfect last minute treat to bring to your Thanksgiving feast!

1 Box of frozen Pillsbury Pie Crust –  2 sheets/box

1 Can of Apple Pie Filling – to make a thin layer

1 Cup of Caramel Sauce  –  for coating – thicker coating for you caramel lovers

1 Egg – for egg-wash

2 tbsp. Cinnamon/Sugar – can buy premixed

1 tbsp. Nutmeg

Flour – small amt. for sprinkling

Any round cooking cutter

Directions:

Pre-Heat Oven: 350°F

On a large cutting board or clean flat surface suitable for cooking, sprinkle a small amount of flour prior to laying out pie crust. 

Grab your rolling pin and a few pinches of flour and roll out your crust.

Pour caramel in a spiral pattern from the center towards the edges and spread evenly to create an even layer of caramel.

Chop your Apple Pie Filling into relatively small chunks before layering on top of caramel.

[Too much Pie Filling will leave you with a soggy pie, so use sparingly!]

Roll out your second pie crust just as you did the first. 

Using a knife or pizza cutter, cut the crust into long strips of dough.

Weave strips of dough as you please to create your own fancy crust toping. 

Dip cooking cutter in egg before cutting pie cookies. 

Once cut, lightly brush top with egg mixture and sprinkle with cinnamon, sugar and nutmeg. 

Spread evenly on a baking sheet. 

Bake for 20-25 minutes or until cookies are golden brown. 

Allow cookies to cool before you devour the whole tray.
